Pasta Salad for the Lazy

Around US, Seattle is known for being rainy and gray all the time. It’s mostly true. But then there are days like today where Seattle goes totally out of character and matches Phoenix, AZ for highest temperature in the nation. That is why today, I felt the need to cool down with a simple dish I call Pasta Salad for the Lazy. It’s easy, it’s served cold, and it’s healthy so you can stay in shape for outdoor adventures.

Ingredients:
  • Box of rotini pasta
  • 1 pound of ham deli meat
  • 2 stalks of broccoli
  • 1 green pepper
  • 1 red pepper
  • 2 cups shredded mozzarella cheese
  • 1/2 bottle Italian dressing
Directions:
  1.  Make the pasta according to the directions on the package. Drain, and spray with cold water. 
  2.  Chop up the broccoli, peppers, and ham into bite sized pieces. 
  3.  In a large bowl, add the pasta, vegetables, cheese, and dressing. Toss until all ingredients are mixed well. 
Serves 6-8
